Soya Chunks Fried Rice
Ingredients Required:
Soya granules - 1/2 Cup
Basmati Rice - 1 Cup
Onion - 1 large (Sliced Thin)
Tomato - 1 large (Chopped Finely)
Ginger - 1 tsp chopped
Garlic - 1 tsp chopped
Green Chilli - 2 small deseeded
Mint leaves - 1 cup packed
Turmeric Powder - 1/4 tsp
Chilli powder - 1/2 tsp
Sambar powder - 1/2 tsp
Garam Masala - 1 tsp
Salt as needed
Oil - 2 Tbsp
Items for tempering:
Jeera Seeds - 1 tsp
Bay leaf - 1
Cloves - 2
Cardamom - 2
Cinnamon stick - 2" stick
Method:
1. Wash the basmati rice until the water runs clear and soak the rice for 15 minutes
2. Heat water in a vessel enough to soak the soya chunks. Once the water is boiling add a dash of salt and add the soya chunks to it. Allow it to cook for 5 minutes and switch off stove.
3. Allow the soya chunks to cook in the hot water for 5 minutes and drain the granules. Once its cool to touch, squeeze the excess water out from the soya chunks.
4. Place a small cooker on the stove and keep it on medium flame. Pour the oil in the cooker and once it is hot, add in the items kept for tempering.
5. Once a nice aroma comes from the spices add the onions and fry them until they are transparent.
6. Once the onions are cooked, add in the ginger, garlic and green chilli and saute for a minute
7. Add the tomatoes and fry them until they are mushy.
8. Once the tomatoes are mushy add turmeric powder, chilli powder, sambar powder and garam masala and fry for a minute
9. Add the cooked soya granules and fry them until the masala gets coated on the soya granules.
10. Now add two tbsp of curd, mint leaves and fry until the oil oozes out.
11. Add the soaked rice and 1.5 cup of water and required salt, give it a stir.
12. Close the pressure cooker and leave it for two whistles. Allow the pressure to release on its own.
